I see Douglas Creek, Hole in the Rock, Chumstick, Sugarloaf, and Ruby Creek listed as the guided trail rides but I'm not familiar with any of those areas yet. Just wondering what each might be classified as as far as technical difficulty level, easy/intermediate/hard? Any of them doable in a capable yet stock 4x4 and new-guy friendly?

Mark, the Douglas Creek water crossing was down to 18" max today. No problem. We did encounter some very tight, brushy areas.
Scott, your Tacoma should do fine. Air down and use low range for Hole in the Rock.
How technical is Hole in the Rock ? I've got a unlifted 2016 Tacoma 4x4

How deep is the water crossing?
Hole in the rock is a little harder. Douglas Creek is pretty easy but involves water crossings. Chumstick, Sugarloaf, and Ruby are all easy.
